Not too long ago I stumbled across Bakerella's website and fell in love with her cake pops. It is such a cute and creative idea and I couldn't wait to make my own! I already made her spider brownie bites but this time I opted to make her Red Velvet Cake Balls since I figured they are slightly easier than the pops. Beware: it does get messy! I think the red velvet in particular was messy since I seemed to be getting red dye all over myself. The end product, however, was a delicious success! Initially I wasn't too crazy about them, but I think it was because I first tried them after being in the kitchen making them for half the day. However, after letting them sit in the refrigerator overnight, I found myself craving one all day; I couldn't wait to come home and have one for dessert! Overall, Bakerella is extremely talented and creative in the kitchen and I can't wait to see what she comes up with next. The next step for me on the other hand are her cake pops!
Red Velvet Cake Balls
1 box red velvet cake mix (cook as directed on box for 13 x 9 cake)
1 can cream cheese frosting (16 oz.)
1 package chocolate bark (regular or white chocolate)
wax paper
Directions
After cake is cooked and cooled completely, crumble into large bowl. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)
Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.) Chill for several hours. (You can speed this up by putting in the freezer.) Melt chocolate in microwave per directions on package.
Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra.) Refrigerate before serving.
